Pumpkin Beet Soup

  • 2Beet, raw
  • 1/2Red Potato, small
  • 1/4Onion, raw
  • 2 tspOlive Oil
  • 1/4 tspSea Salt
  • 1 cupPumpkin Puree, canned
  • 1/2 tspCinnamon, ground
  • 1/4 tspNutmeg, ground
  • 2 tbspPumpkin Seeds, unsalted
  • 1/4 tspBlack Pepper, ground
  • 1/2 cupCoconut Milk, unsweetened
  • 1/2 cupWater


  1. Preheat oven to 400 degrees Fahrenheit. Wash and roughly chop beets and potatoes.
  2. Place on a baking tray with chopped onion and drizzle lightly with oil and salt. Toss and bake for 35 minutes or until tender.
